Pumpkin Chocolate-Chip Protein Cookies

  • 2 Bananas, mashed
  • 1/2 cup Pure pumpkin puree (make sure not to use pumpkin pie filling because this has lots of added sugars!)
  • 1 tbsp Pumpkin Pie Spice
  • 2 tbsp raw, organic honey or maple syrup
  • 2 scoops Vanilla Protein Powder (I use vegan vanilla protein powder or Vital Proteins collagen powder, which is flavorless and great for baking)
  • 1/2 cup Dark Chocolate Chips (I use Enjoy Life dairy-free chips)
  • 2 cups Oats (I use Bob’s Red Mill gluten-free oats)


  1. Preheat oven to 350 degrees.

  2. Add all ingredients to a bowl and mix together.  

  3. Drop spoonfuls of dough onto baking sheet and bake for 10-12 minutes.

  4. Let cool for 5 minutes before eating.  Enjoy!

  5. Store in sealed container in the refrigerator for up to one week.  

Recipe Notes

Depending on the oats and protein you use, you may have to increase the oats. Go by consistency, if the dough is too wet, then add more.
